German scientists from the Fraunhofer Institute of Engineering Processes and Packaging designed cancer preventing bread. Flax seeds contain phytoestrogens, which prevent development of hormone-related cancers, such as breast and prostate cancer. Lupine seeds contain cholesterol lowering substances. Unfortunately, nobody enjoys eating those seeds as they have a bad taste. The scientists came up with a way to introduce the healthy substances from those seeds into our regular foods.
The seeds are processed with acid to eliminate the bitter and other bad flavors. The bitterness disappears while the healthy proteins remain. Those proteins will then be used to prepare foods. The scientists believe that cupcakes, bread, and sauces with healthy substances extracted from flax and lupine seeds will appear on the shelves of the grocery stores by 2011.
