Eat bread crusts if you want to protect yourself from bowel cancer. Scientists have discovered that the antioxidant produced during bread baking prevents certain changes in the body which lead to cancer development.
The substance, which is called Pronyl-lysine, is produced only as a result of a chemical reaction during bread baking. Moreover, it is found in substantially higher concentrations (eight times more) in the crust than in the rest of the loaf. Regular consumption of this antioxidant tends to slow down development of pre-cancerous lesions in the colon.
While the scientists are not sure yet on how much of this antioxidant we need to consume in order to protect ourselves, they believe that this antioxidant should be consumed daily. The results of this study were published in the European Journal of Cancer Prevention.
