The new study held at the University of Iowa showed that fat salad dressings help the body get more carotenoids from fresh vegetables. These useful compounds can reduce the risk of various diseases, including cancer and heart disease.
29 people were invited to participate in the study. They have been offered salads with different dressings: oils high in saturated fats, olive oil and canola oil with monounsaturated fats, as well as corn oil and polyunsaturated fats. Blood tests showed that the more monounsaturated fat there was in the salad dressing, the better carotenoids were digested. Those who want to keep fit are advised to dress salads with olive and canola oil. This is a good choice for those who want to control weight and remain healthy.
